Turkey and Gammon Boxing Day Bowlful

Ingredients
  • Leftover Xmas Turkey
  • Leftover Xmas gammon
  • Leftover roast parsnips roast potatos and carrots
  • 1 tbsp olive oil
  • 1 pint chicken stock
  • 1 tbsp plain flour
  • salt and pepper to taste
  • pinch of dried thyme and sage
  • dumplings (optional)

Cooking Instructions

Heat olive oil in a casserole pot or deep saucepan with lid, then gently fry meat and chopped leftover veg on a low heat for about 5 minutes. Add the salt, pepper, herbs and flour, toss and coat the meat and vegetables.  Add the stock, stir, cover with a lid and leave on a low simmer for 20 minutes, stirring occasionally.  I like to serve this soup with suet dumplings or fresh crusty bread.
