" Because it uses asll of your christmas dinner leftovers and makes a lovely hearty soup, that's simple to make, especially after all the effort of christmas day. "
- Leftover Xmas Turkey
- Leftover Xmas gammon
- Leftover roast parsnips roast potatos and carrots
- 1 tbsp olive oil
- 1 pint chicken stock
- 1 tbsp plain flour
- salt and pepper to taste
- pinch of dried thyme and sage
- dumplings (optional)
Heat olive oil in a casserole pot or deep saucepan with lid, then gently fry meat and chopped leftover veg on a low heat for about 5 minutes. Add the salt, pepper, herbs and flour, toss and coat the meat and vegetables. Add the stock, stir, cover with a lid and leave on a low simmer for 20 minutes, stirring occasionally. I like to serve this soup with suet dumplings or fresh crusty bread.
