June’s  Soup of the Month

A deliciously light, summery green alternative, to a traditional tomato based Minestrone, with a flavoursome twist of added smoked bacon. This month, we asked you for recipes to help us get into shape for summer and ready for the beach – healthy, satisfying soups, that still deliver on flavour. Melanie Booth’s twist on an Italian classic is this months winner as her Summer Green Minestrone and Smoked Bacon recipe ticks all the boxes. She calls it her “have your cake and eat it” soup, because as well as being delicious, it scores well on our traffic lights, with ‘green’ for fat and sugars.
